We have had the benefit of developing our menu with Jeremy Ravenshaw Fowler. A revered chef in his own right, Jeremy has competed with the Americans at their own game in international BBQ events, as well as having the honour of being the only British judge to participate in the top American BBQ championships.
There are many different styles of BBQ in America, depending on which part of the Southern States you are in. Each loosely defined BBQ area has its own favourite meat, spices, BBQ sauces and sides. We take inspiration from all these BBQ styles but being in Hereford, we hang our hat on Texan-style BBQ, which features beef as the star of the show. What better place in the UK to live out our BBQ dream than at the home of the best British beef.
The reason we have fallen in love with BBQ is because the food has no airs or graces. The authentic BBQ experience is fun, indulgent and meant to be shared with family and friends in a laidback setting. There is no faffing with jus, foams or frilly decoration. This is all about flavour. The creation of amazing homemade rubs, marinades and brines to turn chunks of Herefordshire meat into juicy, melt in the mouth masterpieces.
Our belief in flavour extends across our menu as we use great quality local meats, breads and fresh produce to make everything in house from scratch. This is a much more painstaking way to run a restaurant but we believe that the results are more than worth it.
